Garlic Butter Shrimp with Zucchini Noodles

Here’s a simple keto-friendly recipe for dinner: Garlic Butter Shrimp with Zucchini Noodles. This dish is low in carbs and high in flavor.


– 1 pound of large shrimp, peeled and deveined

– 3-4 medium-sized zucchinis

– 4 cloves of garlic, minced

– 2 tablespoons of butter

– 2 tablespoons of olive oil

– 1/4 cup of fresh parsley, chopped

– Salt and pepper to taste

– Red pepper flakes (optional, for some heat)


1. Prepare the zucchini noodles by using a spiralizer or a vegetable peeler. Set them aside on a paper towel to absorb any excess moisture.

2. In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat.

3. Add the minced garlic to the skillet and sauté for about 30 seconds until it becomes fragrant.

4. Add the shrimp to the skillet, season with salt, pepper, and red pepper flakes (if desired). Cook the shrimp for 2-3 minutes on each side or until they turn pink and opaque. Remove the cooked shrimp from the skillet and set them aside.

5. In the same skillet, add the remaining tablespoon of butter. Once melted, add the zucchini noodles and sauté them for about 2-3 minutes or until they’re tender, but not overcooked. Be careful not to overcook them, as they can become mushy.

6. Return the cooked shrimp to the skillet, add chopped parsley, and toss everything together to combine.

7. Taste and adjust the seasoning with additional salt and pepper if needed.

8. Serve hot, garnished with more fresh parsley and a squeeze of lemon juice if desired.
